RSPCA Cupcake Day

As I have previously posted, the RSPCA's latest fundraiser, 'Cupcake Day', is a fun way to help fight animal cruelty. To try and motivate you all to join this worthy cause, I thought it could be useful to supply all those interested but unsure what to bake with a few yummy and simple cupcake recipes. Let's start with a nice simple one ...


Classic Cupcakes 

Ingredients
2 cups self-raising flour, sifted
3/4 cup caster sugar
3/4 cup milk
125g butter, melted, cooled
2 x 59g eggs, beaten
1 teaspoon of Vanilla Essence
Sprinkles and lollies (to decorate!) 

Icing
1 1/2 cups pure icing sugar
1 tablespoon of water 
Food colouring (optional) 

Method
  1. Preheat the oven to 20
       
    1. °C. 
    1. Combine flour and caster sugar in a bowl. 
    1. Add milk, butter, eggs and vanilla essence to the flour and caster sugar. Gently combine. 
    1. Spoon the mixture into cupcake cases and bake for 12 to 15 mintues. Leave the cupcakes to stand in the pan for 5 mintues before transferring to a wire rack to cool. 
    1. Lastly, to make the icing, sift icing sugar into a bowl. Add water and food colouring if you desire. Stir until the mixture is smooth. Decorate as you so wish!
